I really enjoy any dish that has “gata” or “ginataan” in its name. It can be a sweet dessert like ginataang mais, or bilo bilo or a savory treat like ginataang kalabasa. How to Prepare Fresh Bamboo Shoots
It’s important to properly prepare fresh bamboo shoots to ensure their deliciousness and safety. Alternately you can also use canned bamboo shoots if fresh ones are not readily available.
- Select Fresh Bamboo Shoots: Choose young and tender bamboo shoots for the best flavor and texture. Older shoots can be tough and fibrous.
- Peel and Trim: Start by peeling away the tough outer layers of the bamboo shoot using a sharp knife. Cut off the tip and base of the shoot.
- Boil: Place the peeled bamboo shoot in a pot of water and bring it to a boil. Boil for about 1 to 1 1/2 hours, changing the water a few times during the process. This helps remove any bitterness and toxins from the bamboo shoots.
- Slice and Dice: Once the bamboo shoot is tender, remove it from the boiling water and let it cool. Slice into this strips or dice it according to your recipe’s requirements.
- Rinse: Give the sliced bamboo shoots a final rinse to ensure any remaining bitterness or impurities are washed away then completely drain water.

Ginataang Labong
Ingredients
- 2 – 3 cups canned bamboo shoots (you can also use fresh and prepare accordingly)
- 2 cups coconut milk
- 2 tbsp cooking oil
- 3 cloves garlic (chopped)
- 3 pcs chili (chopped)
- 1 small onion (sliced)
- 6-8 pcs shrimp (skin on)
- 1 1/2 tbsp fish sauce
- salt and pepper (to taste)
Instructions
- Wash bamboo shoots thoroughly at least 3 time in running water then drain and transfer in a bowl.2 – 3 cups canned bamboo shoots
- Boil bamboo shoots for at least 5 – 10 minutes to remove pungent smell. Drain water and set aside.
- In a large pan or wok, heat cooking oil over medium heat. Sauté garlic and onion.2 tbsp cooking oil, 3 cloves garlic, 1 small onion
- Add shrimp and fry until pinkish in color then add chili, fish sauce then dash with salt and pepper to taste. Let it cook for a few seconds to infuse flavors.3 pcs chili, 6-8 pcs shrimp, 1 1/2 tbsp fish sauce, salt and pepper
- Remove shrimp from pan and transfer in a plate. Set aside.
- Add boiled bamboo shoots then pour coconut milk. Stir then cover with lid and simmer for 3 – 5 minutes. Add water if needed.2 cups coconut milk
- Return the cooked shrimp and stir to combine. Cook for an additional minute then remove from heat.
- Serve and enjoy with steamed rice. Bon appetit.
