Cheesecake Ice Cream is one of our all-time favorite fresh summer cooler. What could be better than a homemade cheesecake based ice cream? You’re in for a treat today because we’re not only making one but two! Yes! You heard it right, two flavors! Strawberry and Cookies and Cream Ice Creams! With the base Ice Cream, I’m going to show you how to make two different flavors that are absolutely mouthwatering!

Both flavors were inspired by Ben and Jerry’s. I dare say that my homemade strawberry ice cream is at par (or much better) than Ben and Jerry’s. And if you’re thirsty from eating all that ice cream, wash it down with this fresh summer drink Guinilu.

The delicious cookies and cream ice cream made right at home is the best way to cool down this summer! Nothing better than making a batch of cool, refreshing ice cream when the weather outside feels like a hair dryer on full blast.

Making both flavors is easy as pie. Once you’re done with the base ice cream, it’s just a matter of adding the flavors. You don’t even need an ice cream maker for this recipe. Rich and creamy with fruity strawberries and crunchy Oreo cookie bits. You’ll want to eat this ice cream every day, all year long, no matter what season it is.

Tips for Cheesecake Ice Cream
- Allow your package of cream cheese to warm up to room temperature or soften gently in microwave before using.
- Make the base first and allow enough time to chill (at least 1 hour), but more time is better because the ingredients have time to mingle and develop more flavor.

Cheesecake Ice Cream
Ingredients
For base Cheesecake Ice Cream
- 4 cups whipping cream
- 300 grams cream cheese
- 397 grams condensed milk
For Mix-ins
- ½ cup Oreo cookies (crushed (add more if needed))
- ½ cup strawberry jam (add more if needed)
- ½ cup graham biscuits (crushed)
Instructions
Making the Cream Cheese Base
- In a bowl whisk together your cream cheese and condensed milk until smooth.
- I a different bowl. Beat whipping cream with hand mixer or stand mixer until soft peak. Add the cream cheese mixture then whisk in low speed until well combined.
- Divide the cream cheese base mixture in two equal parts.
Making the Cookies and Cream Flavor
- Take one part of the cream cheese base and add the crushed Oreo cookies and mix well.
- Transfer in a container with lid and freeze for 4 hours or overnight.
Making the Strawberry Cheesecake Flavor
- Take the other half of cream cheese base and add strawberry jam and the graham biscuits. Mix well.
- Transfer in a container with lid and freeze for 4 hours or overnight.
