Chicken Teriyaki
Chicken Teriyaki with tender and juicy chicken cooked in easy-homemade sauce! Forget bottled teriyaki, this easy recipe is ready in 20 minutes!
I just love how flavorful the chicken is when cooked this way. It’s savory and sweet at the same time. So whenever I want to prepare a Japanese dish for my family, this is one of my go-to. If I’m up to it, I even go big and pair it with ramen.
What is Teriyaki?
Want to hear something funny? When I was younger, I thought teriyaki is a sauce! LOL! Later on, I discovered that it’s the method of cooking the meat. With chicken teriyaki, the meat is pan-fried or grilled then cooked in the sauce to give it gloss or luster. Some recipes use cubed chicken breast but for me the deboned thigh part with skin on works better for this recipe.
How to make Chicken Teriyaki
This recipe is so easy and you will just work with a few ingredients.
Sauce ingredients | Chicken ingredients |
Sugar | Deboned Chicken Thighs |
Mirin / sake | Pepper |
Soy sauce | Salt |
Cooking oil |
- To make the sauce. Tip in Sugar, soy sauce, mirin in a saucepan. Cook in low-medium heat until the sugar dissolves. Set aside.
- Wash and clean the deboned chicken thigh then drain in a colander to remove excess water. Transfer the chicken into a bowl and rub with salt and pepper. Marinate for 10 mins.
- Heat oil in a frying pan over high heat. Place the chicken skin down and fry until the skin is crispy then turn to cook the other side. Fry for about 10 mins or until golden brown.
- When the chicken thighs are nice and golden, pour the sauce and lower the heat to avoid burning the chicken.
- Patiently spoon over the teriyaki sauce, Simmer for 10 mins or until the sauce is thick. Then garnish with toasted sesame seed. Bon appetite!
Tips for Chicken Teriyaki
- Although other recipes call for baking or grilling the chicken, I suggest pan-frying. And don not for get to fry with the side where the skin is on. The skin keeps the meat from over cooking and as a result, you get moist and juicy meat.
