Ingredients

  • 1 large avocado
  • 4-5 tbsp condensed milk
  • 1 1/2 cups whipping cream
  • 1 tsp vanilla extract
  • 2 tbsp powdered sugar
  • 250 grams mascarpone cheese
  • 1 cup milk for dipping lady finger biscuits
  • 30 pieces lady fingers biscuits

Instructions

  • Peel and pit the ripe avocados, then blend or mash them until smooth.

  • Pour sweetened condensed milk and mix until incorporated. Set aside.

  • In a separate mixing bowl, beat mascarpone cheese using a hand mixer until creamy.

  • Add whipping cream and beat in high speed until soft peak.

  • Tip in powdered sugar and vanilla extract. Beat until incorporated. Taste and adjust sweetness according to preference.

  • Add avocado puree into the cream mixture. Give it a quick mix to combine ingredients.
  • In a 15cm X 20cm aluminum mold or dish, dip lady fingers in milk and arrange in one layer at the bottom of the mold or dish.

  • Get one more lady finger and cut into sections that will fill the gaps of the pan if needed.
  • Top with a layer of avocado cream mixture. Repeat this process for 2-3 layers. Loosely cover with aluminum foil on top.
  • Place in the fridge to chill for at least 2 hours or overnight for best results. Serve and enjoy. Bon appetit.
