This Hong Kong style fried noodles recipe is amazingly flavorful. Crispy noodles with bean sprouts topped with teriyaki sauce and siomai!

Ingredients

Fried Noodles

  • 300 grams egg noodles semi cooked
  • 3 cups water
  • 2 tablespoons vegetable oil
  • 1 medium onion sliced
  • 1 1/2 tbsp light soy sauce
  • 1 cup bean sprouts
  • 1/4 cup spring onions chopped
  • 1 tbsp sesame oil
  • 1/4 tsp salt
  • 1/4 tsp pepper

Teriyaki Sauce

  • 1 cup water
  • 1/4 cup soy sauce
  • 1/2 cup brown sugar
  • 1 tbsp honey
  • 3 cloves garlic chopped
  • 1 tbsp ginger grated
  • 1 tbsp cornstarch for thickening agent
  • 1 tbsp water for thickening agent

Instructions

Making the teriyaki sauce

  • In a small sauce pan, pour water, soy sauce, and honey. Stir until sugar dissolves then bring to a simmer over medium heat.

  • Add garlic, and ginger then stir to incorporate. Simmer for 2-3 minutes.

  • Dissolve cornstarch in water then gradually add to sauce mixture while stirring and cook until thick.

  • Remove sauce pan from heat and strain the sauce into a container.

Making the fried noodles

  • Boil 3 cups water in a pot then add egg noodles. Stir to separate strands and cook until tender and cooked through.

  • Transfer noodles in a colander to drain water. Rinse with cold water and drain excess liquid. Set aside.
  • In a wok or pan, heat vegetable oil over medium-high heat. Sauté onion until translucent then tip in bean sprouts and cook for 2 minutes or until lightly browned.

  • Add cooked egg noodles and fry for 1-2 minutes.
  • Pour light soy sauce, salt ,pepper and spring onions. Stir for 1-2 mins. to evenly distribute ingredients.

  • Add sesame oil and continue frying noodles for 2-3 mins or until lightly crisp. Remove from heat.

  • Transfer a serving of noodles in a bowl and pour teriyaki sauce and some chili oil. Top with siomai. Bon appetit!
