Garlic Pork Loin Roast

- 1 kilo pork loin rolled
- 1/8 tsp pepper
- 1/8 tsp salt
- 1/8 tsp dried thyme
- 8 cloves garlic slightly crushed
Wash thoroughly and pat dry the rolled pork loin with kitchen paper towels.
When the pork loin is properly dry. Poke the loin with a knife or fork. Then Rub with salt, pepper and dried thyme.
Using a knife make a hole big enough to squeeze in the garlic cloves.
Distribute the garlic evenly around the pork loin.
Cover the pork loin with cling film and let marinate for 30 minutes.
While waiting for pork to marinate. Pre-heat the oven to 220C/430F.
When finished marinating. Place the pork in a baking tray with aluminum foil.
Put in the oven and let cook for 40 minutes. Turning it over to cook all sides.
After 40 minutes. Immediately turn oven down to 160C/320F (standard) or 140C/290F (fan) and let roast for another 20 minutes.
When done roasting, put it on a chopping board and cut into desired slices. Pour in gravy and serve. Bon Appetit.
