Soak ampalaya slices in a bowl with water and rock salt for 10 minutes to lessen bitterness.

While ampalaya soaks in water. Place ground pork in a mixing bowl. Add soy sauce, garlic powder, salt, pepper, and potato starch. Mix well until incorporated.

Drain water from ampalaya slices and stuff each slice with marinated ground pork.
Heat oil in a pan over medium heat. When oil is hot enough, dip the stuffed ampalaya in beaten eggs and fry all sides for 3 - 5 minutes. Remove from pan and set aside.
