Maruya

Maruya or Banana Fritters can brighten up even the gloomiest days! With flavorful banana or plantain inside and doughy crust outside. Definitely a good way to start the day with or a mid-afternoon snack.

Ingredients

  • 4 pcs ripe saba bananas or plantain
  • 2 tbsp cooking oil
  • granulated sugar for toppings optional

for milk and vinegar mixture

  • 1 cup fresh milk
  • 1 tbsp vinegar

for batter

  • 1 cup flour
  • 1 tsp baking powder
  • ¼ tsp salt
  • ½ cup sugar
  • 2 tbsp butter melted
  • 1 medium egg
  • milk and vinegar mixture you prepared

Instructions

  • In a small bowl, mix together the milk and vinegar and set aside or let sit for 5 minutes
  • Prepare bananas by peeling and then cutting them lengthwise in three parts. Spread the cut bananas while the sides are still touching. Set aside.

Preparing the batter

  • In a mixing bowl. Add dry ingredients like flour, baking powder, salt, and sugar. Mix using a wire whisk until fully combined.
  • Add wet ingredients. First, the melted butter followed by the egg and the milk and vinegar mixture you prepared.
  • Whisk until batter is formed and flour is totally dissolved.

Cooking the maruya / banana fritters

  • Heat cooking oil in a pan over medium-high heat.
  • Take one spread of banana and dip-coat it in the batter. Banana should be fully coated.
  • Fry the batter-coated bananas in the pan for 15-20 minutes or until golden brown.
  • Serve while warm and sprinkle some granulated sugar on top. Bon appetit!
