Plantain Banana In Caramel Syrup

Ingredients

  • 5 pcs plantain bananas each one cut into 4-6 parts diagonally
  • 1 cup brown sugar
  • 1 1/3 cup warm water
  • 1 cup tapioca pearls cooked
  • 1/2 cup jackfruit fresh or frozen

Instructions

  • In a wide skillet or pan over medium heat, add brown sugar and let sit in the pan without stirring for 2-3 mins. or until it starts to melt.

  • When sugar starts to melt, stir with a wooden spoon or rubber spatula until fully dissolved.
  • Carefully and gradually add water while stirring, if sugar crystalizes, continue stirring until it dissolves.

  • Add plantain banana slices into thepan and mix until all slices are coated with syrup. Cover pan with lid and let simmer for 5-10 mins. or until slightly tender.

  • Tip in jackfruit and mix to distribute. Cover and continue cooking until jackfruit is soft and plantains are cook through.

  • Add cooked tapioca pearls and mix until well combined. Turn off heat and transfer in serving dish. Bon appetit!
