Ingredients

  • 2 large chayote peeled, quartered then sliced
  • 3 tablespoon cooking oil
  • 1 small onion sliced
  • 3 cloves garlic chopped
  • 1 tsp achuete powder optional
  • 1 medium tomato sliced
  • 200 grams ground pork
  • 1/4 tsp salt to taste
  • 1/2 tsp ground pepper
  • 4 tbsp fish sauce
  • 1 1/2 cup water

Instructions

  • Heat oil in a wide pan or skillet over medium heat. Sauté garlic and onion until translucent and fragrant.
    3 tablespoon cooking oil, 1 small onion, 3 cloves garlic
  • Add tomato and cook until wilted. Mix-in achuete powder and and cook for 1 minute.

  • When tomatoes are wilted, tip in the ground pork and cook for 6-8 minutes or until browned.

  • Pour fish sauce and add ground pepper. Stir to incorporate.

  • Add sayote slices then stir to mix with other ingredients until incorporated.

  • Add water and stir then cover pan with a lid. Simmer for 15-20 minutes or until sayote slices are tender.

  • Taste and adjust with salt if needed. Serve and enjoy. Bon appetit!
