Garlic Pork Loin Roast

Ingredients

  • 1 kilo pork loin rolled
  • 1/8 tsp pepper
  • 1/8 tsp salt
  • 1/8 tsp dried thyme
  • 8 cloves garlic slightly crushed

Instructions

  • Wash thoroughly and pat dry the rolled pork loin with kitchen paper towels.
  • When the pork loin is properly dry. Poke the loin with a knife or fork. Then Rub with salt, pepper and dried thyme.
  • Using a knife make a hole big enough to squeeze in the garlic cloves.
  • Distribute the garlic evenly around the pork loin.
  • Cover the pork loin with cling film and let marinate for 30 minutes.
  • While waiting for pork to marinate. Pre-heat the oven to 220C/430F.
  • When finished marinating. Place the pork in a baking tray with aluminum foil.
  • Put in the oven and let cook for 40 minutes. Turning it over to cook all sides.
  • After 40 minutes. Immediately turn oven down to 160C/320F (standard) or 140C/290F (fan) and let roast for another 20 minutes.
  • When done roasting, put it on a chopping board and cut into desired slices. Pour in gravy and serve. Bon Appetit.
