Ingredients

  • 1 ½ cup dried fruits
  • 1 cup water
  • 1 cup brown sugar
  • ¼ cup butter
  • ¼ tsp cinnamon powder
  • ¼ tsp nutmeg
  • ¼ tsp salt
  • 2 eggs beaten
  • 1 ½ cup flour
  • 1 tsp baking soda
  • ¼ cup almond flour optional
  • ½ cup chopped almond
  • ½ cup chopped walnuts

  • 2 tbsp all-purpose flour coat toppings to avoid sinking

Instructions

  • Heat water in a cooking pot or saucepan at medium heat. Tip in the dried fruits, sugar, butter, spiced cinnamon, nutmeg, and salt then stir and simmer for 10 mins. Then transfer in a bowl and set aside to cool.
  • In a bowl add the flour, baking soda, and almond flour. Stir until well combined, set aside.
  • Prepare a loaf pan (4 in X 8 in) by greasing and lining with baking paper/parchment paper then set aside. Pre- Heat oven into 180’C.
  • When the dried fruits mixture is cold, pour the beaten eggs then stir. Add the nuts ( walnuts and almonds) then stir. Add the vanilla extract then add the flour-baking soda mix then incorporate it. Pour into prepared loaf pan.
  • Thinly coat toppings with flour and place on top of the batter then bake for 40-50 mins or until toothpick test comes out clean.
  • Remove from the oven and let cool for a couple of minutes. Serve and enjoy. Joyeux Fete!
